As a Medical Doctor with a Master of Science in Nutrition, I’d love to share everything I’ve learned with you.
Some of you know I’m from Spain, so the Mediterranean diet is part of how I was raised. Last week we started this series with a classic Paella Valenciana.
And yesterday, we talked about the importance of vegetables to make our meals more satisfying and our mood more resilient.
So today, we’re putting that into practice in the most comforting way possible: one of my go-to recipes for cold days and busy weeks—warm, creamy, and genuinely delicious.
My Favorite Comfort Soup
I’ll be honest, I’m not a “soup person.” But when the weather turns cold and our bodies want something comforting, a few soups earn a permanent place on my list.
This is one of them. The kind of recipe that makes people say after the first spoonful: “Okay… this is incredible.” Truly, I’ve never served it to someone who didn’t love it.
